As far as how to make the kefir cheese, I just strain my kefir through a coffee filter. I put a filter in a small strainer, put that over a pitcher so it drains into the pitcher. I pour the kefir in, cover with plastic wrap, and put in the frig. When it has drained enough of the whey so it's the consistency I like, I take it out and put in a container in the frig. You can use the whey for other things or toss. But the whey is good to add probiotics to smoothies! As far as consistency, you can strain it until it is like sour cream, or strain more until it is more like cream cheese. In this post I mentioned that strainer bowl from amazon that I bought, but you can just use what I explained above.
