Intentional Inspirations Newsletter - 5/10/25
The past week has been filled with celebration as my youngest daughter graduated from our homeschool (my two daughters are pictured above). It was a fun day and memories were made that will last a lifetime. But this past week has been busy catching up on things around the house that were neglected while we were busy getting ready for graduation.
My oldest daughter has really been enjoying learning about and growing plants and flowers. The past couple years she has taken Vinca seeds and saved them and used them to start new plants from seed. This is the second year she has done that and now we have LOTS of Vinca plants to use this year. Yeah! I love the Vinca plants because they have such bright green leaves and they flower ALL summer - literally! They are so pretty! Makes me happy!
It’s funny how the little things can make me happy. These little jars continue to make me happy as I fill them with homemade yogurt and kefir for my family each week. Another thing making me happy these days are the Scrub Daddy scrubbers. They do such an amazing job cleaning and it is making a huge difference in my home! I actually look forward to cleaning — now that’s a miracle!

This week when I was making kefir, for some reason the kefir was fermenting WAY too fast and the whey was separating from the kefir. I had two quarts that did that before I figured out that I needed to reduce how many grains I was using to slow things down a bit! I decided that I would use those two quarts, strain them, and make kefir cheese (like sour cream). It is so easy! I used to use a small strainer, coffee filter, and a pitcher as pictured above to strain the kefir. Now I have this amazing strainer that I can use!
I simply poured the two quarts of separated kefir into this strainer, put the lid on, and put it in the refrigerator for about a day. The kefir drained into the bottom and the kefir cheese was left in the top. You can use the whey for lots of things. Some say it is liquid gold :). Don’t tell, but I threw it away this time. I scooped the kefir cheese out of the top and put it in a glass dish with a lid in the refrigerator. I have been using it as sour cream on Mexican dishes and also as a salad dressing or veggie dip. I scoop out some into a small dish, add some garlic salt, pepper, onion flakes, chives, and whatever else sounds good, to make a Ranch type of dip or dressing. It tastes SO good and is so good for you!
This strainer can also be used to make kefir cottage cheese. I haven’t tried that yet, but hope to soon!
Yesterday I ended up doing some baking — making snacks to have in the refrigerator and freezer for the kids. I thought I would share a few of our favorites to have on hand:
Pumpkin Chocolate Chip Muffins - These go in a big container in the freezer and the kids love to get them out for breakfasts or snacks.
Oat Snack Balls - We make variations of this basic recipe, using almond butter and raisins. I also like to add in some coconut oil. I put these in a container in the refrigerator for a quick snack.
Cheesy Muffins - I don’t have this recipe on my website yet, so I will paste it in below. My boys especially love these protein packed muffin for snacks! I put them in a container in the freezer.
Cheesy Muffins
Yield : 12 muffins
Ingredients
4 eggs
1 cup cottage cheese
1 cup gluten-free flour
1 tsp baking powder
1/2 cup shredded cheddar cheese
1/2 cup chopped cooked bacon or ham
1/8 tsp salt
1/2 cup milk kefir (or you can just use milk or buttermilk)
Directions
Mix and place in greased muffin pan.
Bake at 400 degrees for 20-25 minutes.
