Here it is again — too much time has passed since I have sat down and typed out a note to you! Since it is Easter weekend, and I had a bunch of neat things to share, I made time today to get this done.
I am really looking forward to going to our church’s Good Friday service tonight and Sunrise Service, Breakfast, and Worship Service on Sunday. In the midst of a world that is totally out of control, we serve a God who is in control, who sent Jesus to die in our place so we can have forgiveness for our sin and eternal life with Him. My prayer is that during these very trying days, that people will see their need for Jesus and come to Him. I really don’t know how I would get through what we are facing without Jesus. He is my Rock, my Savior.

A friend recently recommended this book, Strategies for Health, so I looked at it online and decided to buy it. Wow! Am I glad I did.
With all the uncertainty right now of whether another pandemic may be coming, what I read in this book really encouraged me to shift my mindset. Here is a quote that I want to share:
Stop thinking, “How can I get rid of this disease?” That’s a disease focus, not a health focus, and it leads you to seek symptomatic relief instead of real healing. Instead, ask yourself, “What do I need to do to be healthy?” That’s a health focus and will shift your mind from thinking about disease to thinking about health. (from Strategies for Health by Steven Horne)
What encouraged me is that instead of worry and fretting about what may be coming next, I need to be asking myself what I can do to be healthy. We usually wait until we have symptoms of something, and then we try to do something to get the symptoms to go away. Instead we should be focusing on getting habits in place that will make us healthier.
I already made myself a list of a few things I am committing to over the next couple weeks to try to get some healthier habits in place. It is too easy for me to focus on the negative and shifting my mindset about health has been huge. I see where I was even using the "natural" herbal remedies to relieve symptoms (which is better than taking drugs) but it was still going about it the wrong way.
I am rambling, but what I really wanted to do is share how this change of mindset has encouraged me and I hope it encourages you as we face these uncertain days. ❤️
P.S. I should clarify that this is not all about trying to live forever or putting an unhealthy focus on health, but about focusing on promoting health and healing in the amazing bodies God made so we can more effectively do His will while we are on this earth. And above all, it's trusting God in regards to the number of our days!
I used to have a product called The Intentional Planner and the past couple of years I have been unable to keep up with creating new calendar pages each year. Well, I have had several email me recently asking me about these pages, so I sat down last weekend and put them together. I created calendars for 2022 and 2023, and the PDF files have fillable fields, so you can either type into the PDF file and then print, or print and write in by hand. Make this yummy dessert for Easter! Below is the recipe for a Trim Healthy Mama Vanilla Cake for those following THM. You can also just use a regular or gluten-free yellow cake mix.
**********************
Vanilla Cake: 9×13-inch (THM:FP)
2 cups Vanilla Cake Master Mix
2 2/3 cups egg whites
1 T. vanilla
2 t. butter extract
Mix all ingredients in a medium-sized bowl. Pour into lightly greased 9×13-inch baking pan. Bake at 350 degrees for 25-30 minutes or until center is cooked.
Frost with your favorite THM friendly frosting. Just be aware that if you add an S frosting, then this recipe will not be FP any more!
To Make Strawberry Dessert
Do not frost the cake! Cut the cake into thirds. In a large glass bowl, layer 1/3 vanilla cake (broken into small pieces), strawberries, and whipped cream, making three layers total. Cover and refrigerator or serve immediately.
