I am so excited! These gluten-free snickerdoodles turned out amazing!
I used the recipe that I had and simply subbed out gluten-free flour for the regular wheat flour. It worked great!
1 cup unsalted butter, softened
1 1/2 cups sugar
2 teaspoons vanilla extract
2 3/4 cups flour (I just use the Walmart Great Value gluten-free flour)
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons sugar
2 teaspoons cinnamon
Mix together the butter, sugar, eggs, and vanilla.
Add the dry ingredients and mix well. Put in a bowl with lid and chill dough for a few hours.
Roll dough into walnut-sized balls, roll in cinnamon/sugar mixture, and then place on greased cookie sheet.
Bake at 400 degrees for about 8-9 minutes.
Yield: 3-4 dozen
